Connections are straight lines. They may cross, but it will be clear which one goes where.

What about the JOCS? Is it possible to have more than one connection from/to this puzzle? Is that connected cell filled with the unambiguous number we are looking for? If more than one connection is used, how to determine which one is that JOC?

There can be multiple connections from/to this puzzle. All the connections must be determined / filled (from the connecting grids) and only then you need to solve the JOCS. So, the answer digit / cell cannot be any cell with a connector.

If I understand it correctly, the JOCS is only solvable when the digits with the connecting line are filled in. Or could it be that the JOCS is solvable and the connecting digits must not conflict with the given solution of the JOCS (for example: In Sudoku A, the cell connected to the JOCS is 7 or 8, but the solution to the JOCS is 8 and eliminates the 8 from that cell, so you can fill in 7 in both solutions)?

Your understanding and first sentence is correct. As per the instructions 'The connecting cells from this grid must be determined before solving the grid as JOCS'.
So, the 7-8 example you give won't happen.

This is same as the JOCS that appeared in WSC 2010. Exactly one cell can be determined.
Since it has connectors, identifying and filling in the connecting digits must be done before solving it as JOCS.

The connecting digits can be filled in without solving the JOCS.
The JOCS will not be solvable until the connecting digits are filled in.

There is only one solution to the JOCS after filling in the connecting digits and there is only one overall solution to the whole set of sudokus.

In Half-Squares Sudoku, when a connection is made to a half-squared cell can the digit be on either side of the diagonal line or must the digit be on the side of the diagonal that the connection touches?

There will be no connectors on a half-squared cell :-)
